Dining by the wild Ayrshire coast has reached new heights with the opening of Tides and Sirens at Seamill Hydro. These two destination venues offer contemporary all-day Scottish dining, afternoon teas, Champagne by the glass, signature cocktails, and small plates, all while providing sweeping sea views of the Firth of Clyde.
Tides Restaurant: A Culinary Experience with Panoramic Views
Tides, the hotel's new 180-cover all-day dining restaurant, serves a menu of modern Scottish flavours framed by floor-to-ceiling panoramic sea views and timeless surroundings. Open daily until 10pm, the kitchen brigade is led by head chef Andrew Heaney, who has crafted a locally sourced menu full of classic dishes and signature showstoppers. Highlights include the decadent Scottish seafood two-tier tower, perfect for sharing, as well as perfectly cooked individual beef Wellingtons, chimichurri-grilled chicken, extensive seafood options, coal-roasted chargrilled meats and burgers, alongside classic pies, seasonal starters, and indulgent desserts. A carefully considered drinks list completes the experience, featuring world wines, draught craft beers, and cocktails.
Design and Ambiance
One of Tides' most distinctive design features is a custom-designed underwater mythical mural, which serves as a dramatic focal point in the restaurant. This artwork complements the luxurious interiors and soft, coastal-inspired colour palette, offering a modern and comfortable dining experience. Tides has been designed to give guests a unique experience each time they visit. Echoing the moon's influence on the sea, the beautiful interiors mirror the movement of water, with a buzzing social atmosphere as you watch day or night go by. From crashing waves during breakfast to sunset-lit dinners, the changing tides of the Firth of Clyde provide sweeping views and an ambience you won't find anywhere else.
Sirens: An Intimate Champagne and Cocktail Lounge
Sirens, the new intimate Champagne and cocktail lounge, is adjacent to the Tides restaurant. Accessed through an illuminated archway that opens into a stylish, speakeasy-inspired space, Sirens is open from noon until late. Every corner at Sirens tells a story with atmospheric lighting and elegant architectural features, setting the mood. The glamorous setting features a curated selection of classic cocktails, from a Neptune Gin Martini to Spritzes, alongside inventive signature serves. Guests will also find Laurent-Perrier Champagne by the glass, with the option to add Kings of London caviar, an extensive no- and low-alcohol section, and a dedicated small-plates menu designed for relaxed, social dining. Flooded with natural light during the day and softly glowing by night, Sirens looks across the gardens towards the Ayrshire coastline, offering guests a beautifully designed space to gather, unwind, and extend the experience before or after dining at Tides.
