How to Turn Puff Pastry Offcuts into a Cheesy Snack
After testing puff pastry, I was inspired to create a new recipe to avoid waste. Malfatti, traditional biscuits made from pastry offcuts, served as inspiration. By adapting this concept, I developed misshapen cheese straws that are perfect for using even small amounts of excess puff pastry. Simply top the offcuts with cheese and fermented vegetables like sauerkraut or kimchi, then twist and bake alongside other dishes for a moreish snack.

Whether you include kimchi for its spicy kick or opt for a milder version, these cheese straws are a delightful way to prevent pastry trimmings from ending up in the compost. The irregular shapes of the pastry enhance the final product, caramelizing into cheesy, irresistible treats. For a child-friendly alternative, consider using a bit of salty Marmite instead of fermented fillings.
Ingredients and Preparation Steps
Ingredients:
- Puff pastry offcuts, any size or shape
- Kimchi or sauerkraut, to taste (optional)
- Grated cheddar or blue cheese, about 1–3 tsp per strip, plus extra for topping
- Milk or leftover egg wash, for glazing
- Sesame seeds (optional)
- Chilli flakes (optional)
Instructions:
- Preheat the oven to 220C (200C fan)/425F/gas 7 and line a baking tray.
- Lay out the puff pastry offcuts on a work surface and spread a thin layer of kimchi or sauerkraut over half of each piece.
- Sprinkle with grated cheese, then fold the pastry in half, press together, and twist into elongated shapes.
- Arrange the straws on the tray, brush with milk or egg wash if available, and top with extra cheese, sesame seeds, or chilli flakes.
- Bake for about 20 minutes until golden brown. Serve warm or store in the fridge for up to three days.
