Cancoillotte, a traditional French cheese dating back over 2,000 years, has become a viral sensation on social media, particularly among fitness enthusiasts. Originating from the Franche-Comté region in eastern France, this runny cheese is being hailed as a 'cheat code' for those seeking to enjoy cheese while meeting fitness goals due to its low fat and high protein content.

What is Cancoillotte?

Cancoillotte, pronounced can-quoi-yote, is sometimes called 'the glue' because of its unique, silky texture that sits between a sauce and a fondue. Its flavour is described by Florent Gacon, co-founder of The French Comte at Borough Market, as 'savoury, tangy, and gently nutty with a distinctive fermented character that gives it a lot of depth.' Despite a pungent aroma, the taste is 'delicate and comforting,' according to Gacon.

How is it made?

The cheese is produced from metton, a skimmed cow's milk curd that is coagulated, heated, and pressed. The metton matures and ferments for several days before being heated with butter, water, and salt. Flavoured varieties include garlic, Jura wine, and mushrooms. Since 2022, cancoillotte has held a Protected Geographical Indication (PGI) status, ensuring its production in Franche-Comté and parts of neighbouring departments.

Why is it trending?

The cheese has gone viral on French TikTok, with influencer @johanpapz amassing over 2.2 million views on a post where he pours cancoillotte over potatoes. 'How is it scientifically possible that a melted cheese is so delicious and has almost no fat in it?' he asks, showing off his abs. Cancoillotte contains less than 10% fat and around 16g of protein per 100g, making it a rare low-fat, high-protein cheese. Other users like @nono_457 have called it a 'number one favourite' and say they eat it 'like it was ice cream'. Florent Gacon notes that its glossy, stretchy texture when heated makes it ideal for social media videos.

Where to buy in the UK

Cancoillotte is still niche in the UK but growing in popularity. It is available at The French Comte stall at Borough Market or online for £7.50 per 200g tub, with flavours including garlic, shallot, and vin jaune. Specialist French delis like La Petite France in Tunbridge Wells, Kent, also stock it.
